The ingredients needed to make Exploding Swordfish:
  1. Take 1 lb. fresh swordfish, about 1" thick
  2. Make ready 1 cup (about) Sour cream
  3. Get Chopped Dill, fresh
  4. Make ready Ground fresh pepper - to taste
  5. Take Lemon juice - just enough to mix with sour cream, but to not make the cream runny
  6. Make ready Cup - white wine (enough to have 3/8" in bottom of baking dish, around the swordfish)
Steps to make Exploding Swordfish:
  1. Mix cold sour cream, chopped dill weed, and lemon. juice together, just briefly.
  2. Place swordfish in baking dish. Dish should have about 1 1/2" around the base of the fish.
  3. Spread the sour cream/dill/lemon mixture over the top of the fish, just to the outer edge of the fish.
  4. Pour wine around the base of the fish, and be sure there is enough to have 3/8" around the fish; this will depend on the size of the dish you use. Don't use too big a dish for this. The goal is to have the wine steam the fish when in the broiler.
  5. Sprinkle fresh pepper over the top of the sour cream mixture atop the fish.
  6. Place dish in broiler, having prewired the oven. Cook 4 minutes for each side; can also try 8 minutes total broiling without turning. See which you like best.
  7. NOTE: The result: Fish will be steamed with the white wine, and the sour cream mixture will be cooked into the fish.
  8. Serve hot from the oven; or chill fully and serve for a great summer luncheon treat!
