  1. Taking the fish from the freezer/fridge let it sit and get to room temperature.
  2. Pat the salmon dry
  3. Season a light coating of salt and pepper
  4. Place pan on medium high heat and let it get hot (drops of water instantly evaporate)
  5. Place Salmon skin side down
  6. Let it sizzle until you see the cooked part reach half way up the salmon.
  7. Flip it and do the same to the other side
  8. Check the temperature with an instant thermometer for 145°F,
  9. If the sear of the salmon “looks good” but the temp is still below 145, put the salmon in the oven at 350 until salmon reaches 145
  10. When ready cut the lemon and drizzle on top of salmon
