  12. place mussels into a new bowl
  13. melt butter in a large, lidded pot over medium heat
  14. stir in shallots and saute' 3 minutes
  15. stir in garlic and saute' another 1-3 minutes
  16. add whine and 1/4 teaspoon of salt.
  17. bring to a simmer
  18. add mussels, and cover with lid.
  19. cook 6-8 minutes
  20. mussels will be ready when shells have opened and they are cooked through.
  21. discard any mussels that did not open
  22. garnish fries with parsley
  23. serve cooking liquid on side as sauce
