This lentil bolognese with spaghetti is vegan, hearty, delicious, and packed with protein and iron! It's super easy to make, packed with nutrients, and soooo delicious! Spaghetti with lentil bolognese has been one of my favorite recipes for a really long time. Delicious vegetarian lentil meatballs made with green lentils, flavoured with olives, parmesan, paprika, fresh chilli and parsley, covered in a fresh cherry tomato tomato sauce flavoured with basil and Chianti wine.
Instructions to make Spaghetti with lentil balls (vegetarian):
- Heat 1 tbn oil in a wok and sauté chopped onions and garlic till you get the aroma from the garlic and onions are translucent. Switch off the stove and let cool
- Strain the lentils soaking in water
- In a blender, combine lentils, onion-garlic sautéed, 1 tbn oil, bread crumbs,2 tbn grated parmesan cheese, 2 tbn chopped parsley,Italian seasoning,salt to taste and black pepper powder
- Blend till you get a thick paste without using much water
- Scoop oil gold ball sized mixture and deep fry them in batches till brown and crisp. Alternatively you can bake them at 180 degrees celcius for 20 minutes or until done
- Meanwhile cook/boil the spaghetti and keep ready
- To plate, make each serving portions : enough spaghetti and douse it with about 2-3 tbn red pasta sauce and coat them well
- Place 2-3 lentil balls on the spaghetti and pour in red pasta sauce on top (quantity of the sauce is as per your liking)
- Garnish with remaining chopped parsley and grated parmesan cheese
